VINIFICATION

Whole grapes processed directly in the press with a maximum yield of 35%.
Fermentation at a controlled temperature of 14 °C
and subsequent èlevage on the fine lees for about 3 months.
Remuage and disgorgement à la volée carried out manually.

Maturation

18/24 months starting from the draft
3 months in the bottle starting from degorgement

ORGANOLEPTIC CHARACTERISTICS

Elegant brut made with the classic manual method starting from Procanico and Chardonnay grapes. Light straw yellow color with greenish reflections. Long lasting on the yeasts, it has a fine nose characterized by hints of citrus and white flowers, a vibrant, fresh palate, with pleasant acidity and medium structure. The perlage is refined and long-lasting.

PRODUCER RECOMMENDATIONS

Ideal with seafood crudités and fried vegetables, it accompanies any meal very well, even fatty foods that are not too salty. To be served at 6-8°C.
